Yummy French Fries

10 pounds of russet potatoes

Oil for frying (preferably vegetable or peanut oil)

Peel your potatoes, then rinse them under cool water. Now, cut each potato into sticks, you can make them as small or as large as you like, we all prefer our sticks to be sometime like a matchstick.

Once you have your sticks, place them in a large bowl and cover the bowl with cold water, then cover the bowl and place it in your fridge for about 2 to 3 hours.

When you are ready to make your fries, take the potato sticks out of the bowl and place on a baking sheet that has been lined with paper towels. Let them dry.

Heat up a few inches of oil to 300 degrees.

Place a batch of potato sticks into heated oil, cook for about 4 to 5 minutes. You will have to do the fries in batches so the potatoes have room to cook properly. Now, take sticks out of oil and place on another baking sheet that you have lined with dry paper towels.

Once all the sticks have been cooked, turn the heat up on your oil, making the oil heat up to 400 degrees, then working in batches place sticks back into the oil and cook until they are golden brown and crispy. Again, place sticks on a paper towel lined baking sheet.

When you are ready to serve your fries, place them on a charming bamboo leaf salad plate and serve.
