The Tastiest Cold Shrimp Salad
4 cups of cooked shrimp (after you cook the shrimp, finely chop it)
2 cups of celery (finely chopped)
1/2 cup red or green pepper (finely chopped)
2 Tablespoons of lemon juice (use juice of fresh lemons if you can, but you can also use bottled juice)
8 Tablespoons of light mayonnaise
1/2 teaspoon of black pepper
A pinch or two of salt
A couple of Avocados (pitted and cut in half)
Combine together shrimp, red pepper, celery, lemon juice and mayonnaise. Mix ingredients thoroughly, then add salt and pepper to taste. Chill for about 15-20 minutes. When you are ready to serve, prepare your avocados by taking the pits out of each one of them.
Now, take a scoop of shrimp salad and put it in your avocados, then place the filled avocado on a chic round bamboo plate. Serve and enjoy a delicious culinary treat.
