Cake pops seem to scare some people, but there is no reason that you should feel scared to make cake pops since all you need to do is follow these tried and true steps for making cake pops.
Steps for Making Delicious Cake Pops
14 ounces of sponge cake crumbs
Rind of 2 lemons, finely grated. (Make sure to use an unwaxed lemon)
14 ounces of white chocolate
7 ounces of butter, unsalted
24 lollipop sticks 7 ounces of milk chocolate
Step 1. Make a sponge cake or buy one from your favorite bakery. (Remember to either make one or buy one that doesn’t have icing or frosting)
Step 2. Crumble up cake and put 14 ounces of crumbles in a bowl, then add lemon rind to crumbles.
Step 3. Place half of the white chocolate and the butter in a heat proof bowl, then place bowl over a simmering pot of water, stir chocolate as it melts. Now, take chocolate off heat and let cool. (You can also use a double boiler or a microwave)
Step 4. Add chocolate to crumb mixture, then using your hands stir together crumb mixture until all ingredients are well blended.
Step 5: Roll mixture into balls, then place on parchment covered baking sheet and cool for about one hour.
Step 6: Melt remaining chocolate as you did in step 3.
Step 7: Once balls are firm, poke a lollipop into each ball, then dip them into the chocolate that you melted in step 6.
Step 8: After dipping balls in chocolate, place back on baking sheet and freeze until they are set.
