Tasty Mixed Berry Tart Recipe
Straight Square Tartlet Shells by Restaurantware (you can also use your homemade mini tart shells, but save some time, get some tartlet shells from Restaurantware
Ingredients you will need for the filling:
2 1/2 cups of whole milk
12 Tablespoons of granulated sugar
1 vanilla bean (scraped)
1 teaspoons of vanilla extract
10 large egg yolks
6 Tablespoons of cornstarch
2 packages of cream cheese (8 ounce packages, cut into cubes)
Put a 1/2 cup of milk, half the sugar and vanilla bean in a medium saucepan, then bring this mixture to a simmer, once it simmers take it off the heat. Now, put the other half of the sugar along with the egg yolks and cornstarch in a mixing bowl, whisk together, then add the rest of the milk and whisk until smooth.
Now, add 1/2 cup of the egg yolk mixture into the vanilla bean mixture, gently whisk while you add these two mixtures together, then continue adding small portions of the egg mixture into the vanilla bean mixture, whisking continually. Put on heat and bring to a boil, whisking constantly. Let cook for 2 minutes, until mixture thickens.
Now, remove from heat and cream cheese, whisk until smooth. Skim the top of the mixture, top with some plastic wrap and place in fridge until it chills. Now, pull pastry cream out of fridge and place a scoop in a tasty mini square tartlet shell, then top with berries.
