Delicious Seafood Stew Recipe:
3 Tablespoons of Olive Oil
1 cup onions (chopped)
3 teaspoons of minced garlic (you can finely chop or mince fresh garlic or buy minced garlic)
1/2 teaspoon of crushed red pepper flakes
2 pounds of mussels (scrubbed and debearded)
16 ounces of sea scallops
1 pound of shrimp (deveined and peeled)
1 cup clam juice
1/2 cup flat leaf parsley (chopped)
2 cans (14.5 ounce) of diced tomato
Using a dutch oven, heat olive oil, then add garlic, onions and red pepper flakes to pan. Now, saute these ingredients for about 2-3 minutes.
Add shrimp, mussels and scallops to the dutch oven, then saute for another minute. Now, stir in parsley, clam juice and diced tomatoes, then bring this mixture to a boil.
Cover dutch oven, simmer for 10 minutes, until mussels open. Remember to discard any mussels that do not open.
After cooking the stew, scoop some of it into lovely black cafe cups and serve.
