Satisfying Lemon Macaroon Recipe
5 cups of powdered sugar
4 cups of almond flour
2 vanilla beans (you will only need the insides of the vanilla beans so scrape each one)
10 egg whites 1 teaspoon of cream of tartar
Zest of 2 lemons Cooking spray
Heat oven to 200F.
Sift together almond flour and powdered sugar.
Beat egg whites for 1 minute, until they are combined.
Add cream of tartar to eggs. Continue beating egg mixture until you form small peaks, about 3 to 5 minutes.
Add the inside of your vanilla beans, continue beating for another 2 to 3 minutes. Mixture will appear glossy, which is what you want.
Now, using a rubber spatula add fold in lemon zest and powdered sugar mixture. Cover a couple of baking sheets with parchment paper, spray a little bit of cooking spray on the parchment paper, then scoop small mounds of the mixture onto the pans, make sure to leave a little room between each macaroon. Now, bake for 8 minutes, then raise temperature of your oven to 375 degrees and continue baking until cookies are golden brown around the edges. This should take about 8 to 10 more minutes.
Now, take cookies out of oven and let cool, then once they are slightly cool, take them off trays. Put several cookies in a classy bamboo food cone, then place cones in a chic crescent cone stand. Enjoy!
