Satisfying Red Pepper Jelly Recipe
3 pounds of red peppers (cut into one inch chunks) – (this is about 3 peppers)
4 teaspoons of dried red pepper flakes
6 Tablespooons of sure-jell (you can also use no sugar added pectin)
6 1/2 cups of sugar
2 cups of white wine vinegar
2 Tablespoons of unsalted butter
1 1/2 teaspoons of salt
Put red peppers and dried pepper flakes in a food processor, pulse until peppers are finely chopped, set aside.
Whisk sure-jell and sugar together in a 1/2 cup small mixing bowl.
Put pepper mixture, butter, vinegar and remaining sugar in a heavy pot, then bring it to a boil. Now, let it boil for five minutes, stirring the mixture occasionally, then slowly add sure-jell mixture and stirring constantly let the mixture come back to a rolling boil. Keep stirring constantly and let mixture boil for about two minutes.
