Saint Patrick’s Day is only a few days away, which means it is time to celebrate by making some corn beef and cabbage, shepherd’s pie and Reuben sandwiches. Here is a scrumptious Reuben sandwich recipe that is great for Saint Patrick’s Day.
Delicious and Easy Saint Patrick’s Day Reuben Sandwich- Serves 8 – The best way to serve these yummy sandwiches is to feature them on square wood plates because these modern earthy wood plates add a great finishing touch to the Reubens.
24 ounces of corned beef, sliced thin
16 slices of Rye bread, light or regular
2 – 8 ounce cans of Sauerkraut, make sure to drain it thoroughly
8 pieces of Swiss cheese
1 cup of Thousand Island Dressing, you can use homemade or your favorite store bought dressing.
Butter one side of each slice of bread, take one piece of bread (butter side down) and begin by putting corned beef on 8 slices of rye bread, then put sauerkraut on top of the corned beef, add thousand island dressing on top of sauerkraut. Now, place on piece of cheese on top of the sauerkraut, then finish by putting another slice of bread (butter side up) on the very top of all the other ingredients.
Now, place each sandwich is a skillet on the stove top and toast each sandwich until it becomes lightly brown, turn over and do the same to the other side.
