Quick Lemon Chicken – recipe serves 25 people
18-22 chicken breasts (it is recommended that you use skinless boneless chicken breast for this recipe)
8 Tablespoons of butter ( it is recommended that you use real unsalted butter for this recipe)
8 Tablespoons of EVOO (extra virgin olive oil)
12 Tablespoons of flour
8 Cups of Chicken Stock
The juice of 8 fresh lemons
Salt and Pepper (the amount is to personal taste)
Put flour in shallow dish, dredge chicken breasts in flour.
Now, heat up a skillet on your stove, then put butter and oil in the skillet, heat these two ingredients up until they begin to sizzle. Saute chicken breasts, once your chicken breasts are sauteed, then take them out of the skillet and set aside.
Add lemon juice in a bowl with the chicken stock, then whisk these two ingredients in with the drippings that were left in the pan when you cooked the breasts. Now, whisk flour into the lemon juice and chicken stock mixture, then cook until mixture begins to boil.
Place chicken breasts back into the pan that is now filled with delicious sauce, then cook until chicken is thoroughly cooked and sauce takes on the consistency that you desire. Taste, then add salt and pepper if you think it needs any. Serve in attractive medium bamboo cups.
These cups can be used for any type of dry foods so it is best to make a tasty rice, then place the rice in the bottom of the cups, then top with pieces of lemon chicken breasts.
