No Fuss Lima Bean Salad Recipe
2 Tablespoons of extra virgin olive oil
4 cups of onions (you can use fresh or frozen)
8 cloves of minced up garlic
2 teaspoons of oregano
2 teaspoons of cinnamon
Red pepper flakes (the amount depends on how hot you want your salad)
4 (14-ounce) cans of diced tomatoes
4 (10-ounce) packages of frozen lima beans (this is about 4 cups)
Heat extra virgin olive oil in a skillet over medium heat. (It is best to use a non-stick skillet)
Add onions, cook until they become soft, usually about 3-5 minutes. Now, add garlic and cook for about 1-2 minutes more, then add cinnamon, oregano and red pepper flakes (remember to just add a few pepper flakes at first, then taste and add more if you want more eat in the salad).
Add tomatoes and lima beans, continue cooking until beans are thoroughly cooked, this should take about 10-12 minutes and serve in beautiful white kova dessert cups.
