Mouth-Watering Caramel Popcorn
8 quarts of popcorn (already popped and ready to eat)
2 cups of brown sugar
1 cup of unsalted butter
1/2 cup of light corn syrup
1 teaspoon of kosher salt (sea salt will also work) (this salt is for sprinkling over the popcorn)
2 teaspoons of pure vanilla extract
1 teaspoon of baking soda
Heat oven to 200 degrees.
Put your already prepared popcorn in a brown paper bag, you can also put it in a large mixing bowl if you don’t have a paper sack.
In a microwave bowl, put brown sugar, corn syrup, butter and salt, then microwave on high for 2-3 minutes, this mixture should begin to boil. Now, stir in vanilla and baking soda, then stir until all ingredients are well combined. Now, drizzle this mixture over the popcorn that you put in your paper bag or mixing bowl. (Try to be fast about adding the caramel mixture to the popcorn because if you aren’t the caramel could become hard). Once you drizzle the caramel over the popcorn, shake bag up-stir popcorn and caramel together.
Now, put popcorn in a large roaster or baking pan, bake for about one hour, stirring every fifteen minutes.
