Here is a quick and easy appetizer treat that you can serve to your catering clients and their guests. This recipe is very flavorful and looks exceptional on black rectangle plates. These types of plates fit perfectly into any casual or upscale dining environment.
Quick Marinated Mushroom Recipe
2 pounds of mushrooms
4 jars of marinated artichoke hearts (14 ounce jars)
2 heads cauliflower
3 cups of water
1 cup of salad oil
2 garlic cloves cut in halves
2 cups of cider vinegar
3 teaspoons of salt
1 teaspoon of peppercorns
1 teaspoon of dried thyme
1 teaspoon of oregano
Saute mushrooms in a saute pan, for about five minutes, while mushrooms are cooking, clean and cut up cauliflower heads, then steam them for about five minutes.
After mushrooms and cauliflower are cooked, cut artichoke hearts into small pieces, then place all ingredients in a large mixing bowl. (Remember to add the liquid from the artichoke hearts, too). Now, in fridge for 24 hours until ingredients marry and blend together, then serve on pretty black rectangle plates. Note: you can keep this in the refrigerator for a very long time, I don’t think it would ever go bad.
