- 2 pounds of summer squash sliced
- 1/2 cup of butter
- 1/2 cup of chopped green bell pepper
- 2 Tablespoons of white sugar
- 1 cup chopped onion
- 2 eggs
- 1 cup of mayonnaise
- 1 cup of shredded Cheddar cheese
- 1 cup of pecans, chopped
- 1 cup of bread crumbs
- Salt and Pepper
The directions for making this masterful summer casserole are:
Preheat oven to 350 degrees F.
Bring a large pot of water to boil on the stove. Add summer squash and cook until tender. Drain well.
Put squash into a large mixing bowl. Add butter, reserving 1 Tablespoon for later use, to the squash and mash well.
