Tasty Mexican Rice Recipe Ingredients:
2 Tablespoons of Olive Oil
1 onion (minced)
2 jalapeno peppers (seeded, then minced)
2 cups of long grain white rice
2 teaspoons of coarse salt
1 1/2 cups of cilantro (packed, stems and leaves chopped)
4 Tablespoons of fresh lime juice
4 scallions (green parts only, chopped)
4 cups of tomatoes (chopped)
Using a large saucepan, heat olive oil, then add onions and jalapeno peppers to the oil and cook until these two ingredients are translucent. Now, add the long grain white rice until it becomes toasted.
Add 3 1/2 cups of water to pan, then bring to a boil. Now, reduce heat to simmer, then cook until liquid from water is absorbed, about 15 minutes. While you are waiting for the rice to cook, put cilantro, scallions and lime juice in a bowl, gently mix these ingredients together. Once rice is cooked, take it off the heat and toss the cilantro mixture in with the rice.
