Tasty Pumpkin Soup Recipe
12 cups of chicken stock
3 teaspoon of salt
8 cups of pumpkin puree
2 teaspoons of chopped fresh parsley
2 cups of chopped onion
1 teaspoon of chopped fresh thyme
2 cloves of garlic, minced
1 cup of heavy whipping cream
10 whole black peppercorns
Using a large stock pot, heat up chicken stock, pumpkin, thyme, salt, garlic and peppercorns. Bring this mixture to a boil, reduce heat to low, then simmer it for 30 minutes, do not cover the mixture.
Now, take a cup or two of the mixture and puree it using a food processor or blender, then return it to the stock pot and simmer for another 30 minutes. Again do not cover the pot.
