This cold cucumber soup can help you achieve this goal because it has a vibrate flavor that is extremely refreshing. A cold soup such as this one is great to serve at all kinds of catering events especially baby showers, bridal showers and wedding receptions.

Fresh Cold Cucumber Soup

This recipe is for 8 servings so remember to increase the ingredients if you’re planning on serving more than eight people.

Ingredients:

  • 6 medium seedless cucumbers, peeled and choppe
  • 1 1/2 thinly sliced green onions
  • 2 Tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 2 teaspoons sea salt
  • 1 teaspoon of freshly ground pepper
  • 3 cups of vegetable broth
  • 1 cup of sour cream

Directions:

Place cucumbers, green onions, lemon juice, lemon zest, sea salt, pepper and vegetable broth into a blender or food processor. Puree these ingredients.

Stir in sour cream and chill for approximately one hour.
