Many chefs seem to be looking for Venison recipes so here is one that tasty and easy to make, serve it up on classy white plates to create the ultimate appetizer or as an added element to a buffet setting.
Tasty Venison Sausage
1/2 cup sugar
1/2 cup mustard seed
1/4 cup of garlic powder
2 cups of salt
1/4 cup of black pepper
24 pounds of pork (cubed)
12 pounds of venison (cubed)
Put mustard seed, garlic, salt, pepper and sugar in large bowl, mix up with pork and venison. Once you have all the ingredients mixed up nicely, put mixture into a meat grinder.
Now, divide mixture into sections and form rolls, then wrap each roll up with aluminum foil, remember to keep the shiny side out.
Now, put in refrigerator for 24 hours. After your meat sits in the fridge for 24 hours, take it out and put a few holes in the foil, then place on rack in a 325 degree oven for about 1 1/2 hours. Note: the meat will like slightly rare, but it should look this way because of the curing.
