A Yummy Pumpkin Crunch Parfait Recipe
1 1/2 cups of milk (whole milk works better for this recipe)
2 packages of instant vanilla pudding
4 cups of whipped topping (you can make a homemade whipped topping or simply purchase one from the store)
2 cups of canned of pumpkin
1 teaspoon of pumpkin pie spice
2 cups of pecans 64 gingersnaps (crushed up fine)
Extra Whipped Topping
In a mixing bowl, use a mixer and combine milk and pudding, beat for two minutes. Now, stir in whipped topping, pumpkin and pumpkin pie spice, then gently fold in the pecans.
Now, take a spoonful of this mixture and place in a high quality mini parfait glass, then top this mixture with some of the crushed gingersnaps, then top with a little whipped topping and continue this process until the glass is full. Note: remember to end with the whipped topping.
