Easy Mini Chocolate Cupcakes
2 2/3 Flour (self-rising)
2 1/2 Cups Caster Sugar
1 Cup Cocoa Powder
250 grams of softened butter
2 teaspoons of vanilla extract
1 1/3 Cups of Water
Heat oven to 180 C, then place your mini cupcake papers into mini cupcake pans.
Now, Put all the ingredients in a large mixing bowl and using an electric mixer, on a low speed beat all ingredients until they are combined, then switch your speed to high and beat for a couple of more minutes. At this point your batter should be a pale color.
Now, using a scoop or spoon put your batter into your cupcake papers and bake for about 15 minutes. You can check your cupcakes by using a toothpick or skewer, just stick one of these tools into the center of a cupcake and if it comes out clean than the cupcake is done.
After your cupcakes have finished baking, let them cool in their pans. Note: when they are cool to the touch you can remove them from the pans and put on cooling rack.
