This easy Couscous recipe is packed full of great flavors, it is a great appetizer to serve at parties and catering events. Turn it into an incredible Amuse Bouche treat by serving it on exquisite porcelain fish spoons.
Easy and Tasty Couscous Recipe
2 cups chicken broth (low sodium chicken broth is best)
2 cups of uncooked couscous
2 medium cucumber (halved and get into chunks)
3 cups of cherry tomatoes
1 cup of feta cheese
1/2 red onion (chopped)
6 Tablespoons of fresh parsley
6 Tablespoons of lemon juice
6 Tablespoons of olive oil
2 teaspoons of dried oregano
1 1/2 teaspoons of cumin
salt and pepper (to taste)
Using a saucepan, bring chicken broth to a boil, then stir couscous into the broth. Now, take pan off heat, cover and let stand for about five minutes, until broth has absorbed into the couscous. After broth absorbs, use a fork and fluff the couscous.
Put cucumbers, tomatoes, onion, cheese and parsley into a large mixing bowl, then mix couscous with the cucumber mixture. Put olive oil, lemon juice and seasonings into a bowl, Whisk these ingredients and drizzle dressing over couscous mixture.
Now, scoop some couscous mixture onto a beautiful Porcelain Fish Spoon and serve as a tasty Amuse Bouche.
