This noodle salad is packed full of great flavors and serve on exquisite small sized round bamboo plates. It makes an excellent appetizer or side dish recipe. Plus, it works well as an additional element to any type of dinner feast. Hope you love it as much as I do.
Flavorful Noodle Salad – Recipe is makes about 11 to 12 servings.
15 Tablespoons of soy sauce (it is best to use low-sodium soy sauce)
12 Tablespoons of seasoned rice vinegar (sushi vinegar)
3 Tablespoons of Lemon Juice (fresh juice is best)
3 teaspoons of sugar
3 Tablespoons of vegetable oil
24 ounces of buckwheat noodles, fettuccine noodles or any whole wheat pasta 12 scallions (thinly sliced)
1 1/2 cups of English cucumbers (thinly sliced, peeled and seeded)
6 cups of a cabbage coleslaw mix
Combine soy sauce, lemon juice, vinegar, oil and sugar in a small mixing bowl. Now, cook your pasta until it is just tender, then drain pasta and run cold water over it. Let pasta cool, then toss scallions, cucumbers and coleslaw mix in with your noodles.
Now, drizzle soy sauce mixture over the noodle mixture, then scoop several Tablespoons of these heavenly salad on the top of chic small round bamboo plates and serve.
