Delicious Stuffed Jalapeno Pepper Recipe


6 Roma Tomatoes (de-seeded and chopped)

2 Small Red Onions (finely chopped)

1/2 Cup of Cilantro (finely chopped)

1/2 Cup Monterey Cheddar Cheese

24 Jalapeno Peppers

Salt, Pepper and Olive Oil


Heat oven to 400 degrees. Slice peppers down the middle, then remove the pith and the seeds. In a small bowl combine cheese, tomatoes, cilantro and red onions, then add salt and pepper to this mixture.

Now, stuff peppers with the mixture, then brush olive oil all over each pepper. Bake peppers for 20 minutes, until they are slightly golden in color. You can also place peppers on a heated grill and cook them. Now, put peppers on classy carved bamboo spoons and Enjoy.
