Delicious Stuffed Jalapeno Pepper Recipe
6 Roma Tomatoes (de-seeded and chopped)
2 Small Red Onions (finely chopped)
1/2 Cup of Cilantro (finely chopped)
1/2 Cup Monterey Cheddar Cheese
24 Jalapeno Peppers
Salt, Pepper and Olive Oil
Heat oven to 400 degrees. Slice peppers down the middle, then remove the pith and the seeds. In a small bowl combine cheese, tomatoes, cilantro and red onions, then add salt and pepper to this mixture.
