2 1/5 Cups of Flour
2 Cups of Sugar
1 Tablespoon of Cocoa
1 teaspoon of salt
1 teaspoon of baking soda
1 1/5 Cups of Oil
1 Cup of Buttermilk
1 Tablespoon of Vinegar
4 Tablespoons of Red Food Coloring
1 teaspoon of Vanilla Extract
Heat your oven to 350 degrees, Place mini cupcake papers in a mini cupcake pan. In a medium sized mixing bowl, combine flour, baking soda, salt, cocoa and sugar. Whisk these ingredients until thoroughly combined.
Now, In a large mixing bowl, combine eggs, oil, buttermilk, vanilla, vinegar and red food coloring, whisk these ingredients until thoroughly combined, then slowly add the dry ingredients to the wet ingredients (the flour mixture to the egg mixture) and gently stir all the ingredients together.
Now, fill the cupcake papers until they are about half full, then bake for about 9 – 10 minutes, until cupcakes are set. Note: Let your cupcakes sit in pans to cool, then move them to a rack so they can continue cooling.
