Collard Greens Should Be The Star At Mardi Gras Festivities

Everyone knows that collard greens should be one of the stars at a Mardi Gras party, bash or celebration. So, don’t forget to make these tasty collard greens that all your guests will love to eat.

Amazing Bacon Collard Greens:


4 Pounds of Collard Greens

8 slices of thick bacon – chopped

2 cups of sweet onions –chopped

10 cups reduced sodium chicken broth

2 cups of sun-dried tomatoes – chopped, make sure these aren’t packed in oil

1 teaspoon of garlic powder

½ teaspoon of salt

½ teaspoon of red pepper flakes


Trim the thick stems of the collard greens. Coarsely chop the collard green leaves. In a Dutch Oven, sauté bacon for about 3 minutes, add onion and cook for about another 8-9 minutes until the onions are tender and bacon is crispy. Now, add the greens and cook until they’re wilted.

Stir in the remaining ingredients and bring everything to a boil. Reduce heat, simmer for 45-50 minutes until greens are tender.

This is a very easy side dish to make for a Mardi Gras festivity. I hope you enjoy it as much as I have in the past.
