This tomato soup recipe is easy to make and tastes great. It is constructed from ingredients that most people already have on hand in their pantry so you can make this tasty appetizer any time of the year. Plus, this recipe works very well as a party appetizer at any small or big catering function.
Easy Tomato Soup ( This recipe is designed to serve 12)
2 Tablespoons of EVOO
6 cloves of garlic (minced)
2 teaspoons of dried herbs (a combination of thyme, oregano, rosemary and basil works well)
4 (28 ounce) cans of crushed tomatoes
2 cups of water
4 teaspoons of sugar
1/2 teaspoon of crushed red pepper flakes
4 cups of milk (you can use whole or non-fat milk, it is entirely up to your personal taste)
Using a medium heat, heat oil up in a large sized saucepan, then add garlic, herbs and crushed red pepper flakes. Cook these ingredients together for about one minute, then add water, tomatoes and sugar.
Now, Bring all ingredients to a boil and simmer for about ten minutes, then add milk and cook until all ingredients are nice and hot.
