This luscious creamed spinach recipe tastes incredible and looks beautiful served up in Carved Bamboo Spoons. Luscious Creamed Spinach Recipe
2 Tablespoons plus another
2 1/4 teaspoons of olive oil
8 and 1/4 (16 ounce) bags of spinach (preferably fresh spinach) salt and pepper (to taste)
1/4 cup plus another 1 teaspoon of butter 1/2 cup plus another teaspoon of shallots (minced)
About 4 pinches of cayenne pepper
3 cups plus another 2 Tablespoons of heavy whipping cream
1 Tablespoon plus another
1 1/4 teaspoon of lemon zest (finely grated)
About 4 pinches of nutmeg
1/2 cup plus another
1 teaspoon Parmigiano cheese
Using a large soup pot, place olive oil in pot, then add spinach and cook with cover on pan over high heat for 1 minute. Now, uncover and stir, then cook for another 2 or 3 minutes until spinach takes on a wilted appearance. Once spinach turns bright green and looks like it is wilted, quickly take it off the heat and drain it in a strainer, then place it on a few paper towels.
When spinach is cool enough to touch, using your hands ring it out as good as you can, the goal is to try and get all the water out of the spinach. Now, give the spinach a coarse chopping. Mix together all the spices in a small bowl. Using a large skillet, place butter in skillet, add shallots and cook until they are slightly browned.
Now, stir in the spices and whipping cream, then turn heat to medium high and let this mixture reduce by about 1/2. (This usually takes between 5 and 7 minutes), Stir in lemon zest. Once mixture has reduced by 1/2, turn temperature to low and stir in spinach, cook until spinach and cream are heated thoroughly.
Now, stir in cheese and cook for another minute or two.
