Flavorful Mexican Macaroni Salad Recipe
Instructions for making this salad:
Boil some water, once water boils, put pasta in the water and cook until al dente.
Drain macaroni, then rinse it and put it in a bowl and set aside.
Now, place two or three ears of corn on a grill or a grill pan (you can also just use a skillet if you don’t have a grill), then char the ears of corn.
While your corn cooks, chop some onions, tomatoes, black olives, and green onions.
Take corn off grill or out of pan and cut the kernels from the cob.
Now, drain a can of beans, you can use almost any canned bean here, but most folks prefer kidney beans.
It is time to create the dressing.
Put a couple cups of salsa in a bowl, then add a couple dallops of sour cream (about 1-1 1/2 cups). Now, add a couple of Tablespoons of mayonnaise, then grate some garlic into this mixture. At this point, you should add a teaspoon of cumin, stir all these ingredients together until they are mixed well.
Now, put all your salad ingredients together in one bowl (the macaroni, vegetables, all the ingredients, except the dressing) mix well.
